DVISI is a fine dining restaurant on the ground floor of Hotel Casa Vincke in Palamós, led by chef Jordi Simón, whose signature cuisine blends Catalan roots with French, Asian and Latin American touches applied to local produce. It holds a Sol Repsol and a Michelin Guide recommendation. The dining room opens onto the hotel's pool garden, with an annexe that serves as a terrace. It opens Tuesday to Saturday for lunch and dinner, with off-street parking on site.

Jordi Simón and Laura de Vicente met at sixteen at the Girona School of Hospitality and spent nine years cooking and serving together at Girona's Massana before opening their own restaurant in Palamós in 2014. Dvisi joins their surnames, de Vicente and Simón, and doubles as a play on de vicio, the Catalan way of calling a dish so good it becomes a habit. Simón's plates carry that Catalan base through Asian and Latin American technique, in dishes like an aguachile of Palamós prawns and a xuixo filled with fricandó. The restaurant started small in the village before moving into Casa Vincke's garden four years later. Sommelier Joan Costa builds the wine list around Empordà producers and picks bottles by taste rather than from a fixed pairing menu.
