St. Hubertus was the three-Michelin-star restaurant inside the Rosa Alpina hotel in San Cassiano, led by chef Norbert Niederkofler under his "Cook the Mountain" philosophy: only ingredients sourced from the Dolomites' alpine arc, nothing imported. It ranked among the World's 50 Best restaurants during its run. Rosa Alpina closed after the 2024 season for a two-year renovation and reopened in 2025 as Aman Rosa Alpina with a different dining lineup, so St. Hubertus no longer operates at this address.
