Beer has been brewed in these castle cellars in Velka Bystrice since 1579, and the site reopened as a modern microbrewery in 2020 after the vaults were restored. Lagers and top-fermented styles come out unfiltered and unpasteurized in small batches, with six taps pouring straight from tanks a few meters from the tables. A cheese dairy followed in spring 2021, handcrafting tvarůžky, a pungent Czech curd cheese, in the same cool, damp stone cellars that shape its flavor. The kitchen builds dishes around it, fried tvarůžky and tvarůžky tartare among them, so the beer and the cheese share a menu as well as a building. The summer garden has its own small hop garden, which supplies a limited annual seasonal beer, plus bike parking and e-bike charging points that make the stop convenient for cyclists riding the region.
